Christmas Candy – Making Your Own

Doctors will tell you that candy will rot your teeth. But, we all know that everything is not as bad as it first seems when eaten in moderation. This includes candy. Here are some ideas for Christmas candies to dazzle the family.

It is a bad day when the candy jar on the coffee table is empty. Candy is the ice breaker when visitors come to your home. While they think of something witty to say, a candy helps them think. At Christmas, an empty candy jar is plain sacrilegious. Here are some tips to help you make your own candy, but be careful the jar might empty faster when you fill it up with homemade treats.

Candy needs a thermometer to tell when it’s ready. There are several stages for candy. The soft crack stage is reached when the temperature of the mixture is between 270 and 290 degrees F. at this point much of the water has evaporated out of the candy mixture, leaving only sugars.

The hard crack stage is reached at 300 to 310 degrees F. the water has completely evaporated. When the candy cools, it will be hard and produce a sharp cracking sound when broken. Know which stage is necessary for your candy. Some candies need a soft ball stage which is when water is still part of the mixture. The cooled mixture is pliable enough to allow for shaping of the candy.

Try your hand at peanut brittle this Christmas. It is bigger than the traditional candy we see around the holidays, but it is a favorite. For those who do not like peanuts, add some pecans or almonds instead. Peanut brittle is a mix of the sweet candy and the salty peanuts. The taste is less salty with pecans, but still flavorful.

Crack up a sheet of peanut brittle and place it in a wax paper-lined cookie tin. Give brittle as gifts to school teachers, Sunday school teachers, friends, and neighbors.

Making candy doesn’t have to be hard. Start out with simple recipes and work your way up to the more difficult ones. Most candy is mixed in a saucepan over varying levels of heat. Since the range top doesn’t have temperature settings, hanging the candy thermometer over the side of the pan, gives a more accurate reading of the candy temperature. Don’t leave the candy unattended or it will surely be ruined.

Hard candy, soft candy, citrus peel candies, truffles, brittle, and the like are all interesting treats to nibble on during Christmas. Properly store the candy so it will keep all the way through until the end of the year.
